Cucumber Salad
1 Whole Cucumber
50g Spring Onions
1 tsp Sugar
½ the juice of a large lemon
2 tbsp Olive oil
2 tsp Roasted sesame oil
1 tbsp Soy Sauce
Coriander to sprinkle on the top
- Lay the cucumber on its side and cut into 3 inch long pieces. Cut each of these pieces into thin slices along the length of the cucumber. Lay them flat and slice them length wise again to give 3 inch long string like strips.
- Cut spring onion into similar shaped pieces.
- Mix the ingredients and sprinkle over the cucumber and spring onion. Mix well and serve.
