Duck Recipes

 Duck Meat Stew

The meat from 1 whole duck (the bones can be reserved for a soup)
2 tbsp dark soy sauce or more if you like the taste
1 tbsp light soy sauce
1-3 tbsp red wine or 1 tbsp whiskey or 1tbsp saki/vodka.
2 tbsp sun flower oil
20g ginger
1 tsp sugar
Spring onion to sprinkle on top

    • Using a pan heat the oil, slice the ginger into thin pieces and stir fry for 30 seconds.
    • Add duck meat (the skin can go in first if it can be eaten). Cook on one side on a medium heat for 2 minutes. Turn over and cook for a further 2 minutes.
    • Add 200ml water, the soy sauce, sugar and wine.
    • Cover and stew on a low heat for 5-10 minutes (dependent on how thick the duck pieces are) adding more hot water if necessary. Turning occasionally.
    • Sprinkle spring onion before serving.
