Marinated Chicken with Shitake Mushrooms (serves 3 people)
Preparation Time: 10mins (plus ½ hour or more for marinating)
Cooking Time: 10mins
Ingredients:
2 Large Organic Chicken breasts – Skinless (approx. 300g)
150g Fresh Shitake Mushrooms
1g Salt
1 tbsp Soy Sauce
1tbsp Dark Soy sauce
Black pepper
½ tbsp Vodka or Chinese Rice Wine (optional)
1tsp Sugar
5g Potato starch/Corn flour
2tbsp Corn oil/Sunflower oil
(1 tsp sesame oil to add at the end.)
Instructions:
- Slice the chicken breasts and shitake mushrooms into thin strips.
- Excluding the sesame oil (which is added later) mix all of the other ingredients together to create a sauce.
- Add the chicken and the mushrooms. Marinate for ½ hour minimum (overnight in the refrigerator is better).
- Spread over a dish and fully steam for 5mins ensuring the mixture is only one layer thick to allow even and quicker cooking.
- Once cooked finely chop some spring onions and coriander. Sprinkle over the top with the sesame oil.
Serve with: Rice, potatoes or other vegetables. Boiled or steamed salad is also good.
