Winter melon and duck soup

1 whole duck – water duck is much better for maintaining normal health (e.g. white feathered ducks)
1 kilo winter melon – typically found in Chinese supermarkets (if winter melon can not be found, ½ kilo of celeriac can be used chopped into smaller pieces)
20g ginger

  1. Remove the meat from the duck and put aside for a separate dish (see duck meat stew recipe). Leave a very small amount of meat on the bones and chop the bones into small pieces.
  2. Cut the melon into 2 inch cubes, slice the ginger (celeriac should be chopped into 1 inch cubes)
  3. Place bones, ginger and melon/celeriac into a pan covering with 2 litres of water. Simmer for 2 hours. Black pepper can be added to taste.

 

Instead of duck, pork or pork ribs can be used.

Winter melon is very good in summer for preventing heat stroke due to its healing properties. It is also good for most skin conditions as it removes heat from the blood (detoxifies).
Celeriac is good for lowering blood pressure and digestion issues such as bloating.
