Steamed Minced Pork

Preparation time: 10mins
Cooking time: 5mins

200g lean minced pork
2 tbsp light soy sauce
1 tbsp dark soy sauce
2 tbsp sunflower oil/corn oil
1 tsp sugar
1tbsp corn flour
Sesame oil – to taste
Spring onions

Instructions:

  1. Mix all ingredients together well. Marinate and allow to stand in the refrigerator for ½ to 1 hour (overnight is better but should only be done if the pork is fresh.)
  2. Remove from fridge and mix again.
  3. Arrange in a very thin layer in the plate or dish you will be using to steam so that the mixture comes to approximately 2cm thick.
  4. Strong steam for 5 minutes (Maximum 6 minutes if your layer is thicker than advised)
  5. Once cooked add a few drops of sesame oil and some finely chopped spring onion.

Serve with pasta, potatoes, rice or vegetables.

This dish can be made with prawns or squid but either ingredient must be chopped finely and mixed well with the pork before steaming (possibly adding more salt or soy sauce due to the increased amount of ingredients) to ensure they are cooked all the way through.

This recipe is good for energy (qi). Without the squid or prawns the meal is very easy to digest and so can even be given to babies from the age of ten months. It is particularly good for the elderly for the same reason. If the mince is too fatty it will not be as easy to digest and this is why we have suggested lean mince. Pork is a neutral food and so will not add too much heat or cold to the body.
The seafood is therefore an addition for those with a slightly stronger constitution.
