Pak Choi and Pork Soup

Good for those with heat conditions and so works well in summer. Pak choi is very good for people who have mild cystitis as it helps detoxify the bladder (and kidneys).
It is not good for elderly women or those with incontinence.

Serves 4-5 people

½ kilo Pak choi
1 lb pork shoulder
20g ginger finely chopped

    • Cut pork into small cubes, put into a pot with the ginger and 2 litres of water. (In winter it is best to stir fry the pork and ginger together for a minute before adding the water).
    • Cut the bottom of the pak choi away and clean the inside of the leaves.
    • Once the water starts to boil, add the pak choi and simmer for 1 to 1 ½ hours.
    • (To make a blended soup add less water and simmer with thinly sliced potatoes. After the 1 ½ hours of simmering put everything into a blender until desired consistence is reached)
