Pork and papaya soup
1 kilo green papaya (should be quite hard/fresh)
1 lb pork shoulder (pork ribs can be used if they can be chopped into 1 inch pieces)
20 g ginger
- Peel skin from papaya and cut in half. Remove seeds and chop into 2 inch cubes. Cut the pork into slightly smaller pieces (1 inch cubes)
- Put everything into a large pot with 2 litres of water. Bring to the boil then allow to simmer for 1 ½ to 2 hours.
Papaya is very good for nourishing the body.
