Tofu and Mushroom Stir Fry
1 lb Fresh Tofu
200g Shitake mushrooms
1 glove garlic
50g Coriander or 2/3 large spring onions
1 tbsp soy sauce
1tbsp Oyster sauce
A little oil to stir fry with
- Chop tofu into cubes. Slice the coriander or spring onions into thin (1inch) pieces. Finely chop the garlic.
- Heat a pan or wok and add the oil. Once hot, put in the tofu and stir fry for 2 minutes. Turning occasionally; and gently to maintain the shape.
- Add mushrooms and salt. Continue to stir fry for a further 2 minutes.
- Add the oyster sauce, mix well. Leave for another 1 minute then add the sugar.
- In a separate bowel mix the soy sauce, corn flour with approximately 20ml of water. If the dish starts to dry up add a little more water.
- Pour onto the tofu. Mix in the garlic and spring onion or coriander. Stir ingredients together well and serve.
