Vegetarian – steamed eggs and cucumber
Ingredients:
1 medium sized cucumber
3 eggs
2/3 tsp salt for egg mix and 1 tsp later on
½ tsp sugar
1 tsp oyster sauce
1 glove garlic
1 piece spring onion
3 tbsp corn/ sun flower oil
Instructions:
- Divide cucumber in ½ length wise. Turn the flat sides down onto the cutting surface. Slice in thin, long diagonal slices approximately ½ centimetre thick so the shape will be similar to mange tout only larger.
- Beat eggs adding in the salt and sugar. Continue mixing for 3-4 minutes.
- Heat a non-stick pan with oil. Spread eggs over to create a thin layer within the pan. And heat for 1-2 minutes. Flip over and heat the other side. Do not over cook.
- Remove from pan and slice into thin pieces similarly sized to the cucumber.
- Heat pan again with 2 tbsp of oil on a high heat. Put in garlic finely chopped. Add cucumber and stir fry for 1 minute. Add 1 tsp of salt and oyster sauce. Cover and simmer on low heat for 30 seconds.
- Mix and add egg. Stir fry further for 1 minute. Add spring onion and mix at end.
- Remove and serve with rice.
Good for: almost any condition – especially patients with acid in stomach as cucumber has a higher ph (alkali) to counter balance the acidity.
It is most important to not burn the egg as it will create more heat when it is eaten.
Bad for: Stir fried egg is not good for acne, eczema or high cholesterol. The cucumber will balance out the effects of the eggs in regards to those with skin conditions however it should not be eaten regularly.
